My love for Fridays has — remarkably — grown this semester. With no classes and no urgent work to attend to, I get the luxury of taking things at my own pace. I also get to be a little more artistic with my breakfasts.
Take for instance my “leaning tower of muffin.”
Consumed: One white chocolate and berry muffin, split three ways and smeared with almond butter and mashed banana.
My leisurely morning also allowed me to practice some much-needed yoga and Pilates. It hurt so good!
Later, I picked up Dan and we headed out for lunch at McAlister’s Deli.
The road to McAlister’s is also the road to the town where Dan and I will be getting married. So, after lunch, we got back in the car and headed to Baldwin City to attend to some wedding-related business.
In between tasks out there, we had some time to swing by the coffee caboose — It is literally a renovated train caboose.
Side Note: I am on such a Chai kick lately! Love that stuff!
We took our drinks to-go and headed out to the still-icy lake.
With all of our tasks for the day completed, we were back in Lawrence in time for dinner. The problem was that I had no motivation to cook (that does happen occasionally). The other problem was that I wanted a big salad while Dan was craving Chinese. We ultimately settled on HyVee, which allowed me to take use of the monstrous salad bar and allowed Dan to get some Chinese express. Win-win!
When we left to get back in the car, both Dan and I were shocked to see how big and close the moon appeared to be. I really have never seen it that big before! Apparently the huge moon inspired our Redbox movie choice for the night: We got “The Wolfman.”
The rest of the night was spent watching the movie and savoring some Moose Tracks ice cream. Basically, it was perfect.
