Worth Talking About Wednesday, 9/14

Once again, this week’s “Worth Talking About Wednesday” is a little all over the place. But, with topics relating to food, running and presidents, it’s oh-so me.

Pumpkin

Last week, one of my topics was Starbuck’s Pumpkin Spice Latte. This topic is dangerously close. You caught me.

I’m sorry, but pumpkin is just that worth talking about. Even though we aren’t yet in fall, I caved this weekend and bought a few cans of pumpkin from the store. There are so many recipes to make and play around with!

One of the first pumpkin recipes to make an appearance in my house was the tried-and-true breakfast of pumpkin overnight oats.

For this beauty, I went with…

  • 1/2 C vanilla yogurt
  • 1/4 C pumpkin
  • 1/3 C oats
  • Drizzle of maple syrup
  • Sprinkle of pumpkin pie spice

In the morning, I topped it with some almond slices. That’s it.

Oh, the pumpkin + chocolate thing on top? You’ll just have to be patient to learn more about that! (:

Brie Cheese

I really, really didn’t like cheese when I was growing up. I even refused to eat pizza, just because of the cheesy topping. The two exceptions were feta and brie cheeses.

Since that time, I’ve welcomed many more varieties of cheese into my diet. Still, feta and brie and my very favorites.

Unfortunately, brie is a little pricy for my budget, so it’s a special treat — and, this week, I decided to splurge! I used part of the round a few days ago on my brie and apple panini. Today, I finished the cheese off by making spinach and artichoke paninis.

It was basically the same process as the apple paninis. Except, instead of apples and jelly, I used a few leafs of spinach and artichoke hearts.

The brie totally kicks the sandwich up a notch!

Some roasted asparagus on the side certainly helped, though.

My Running Buddy

On Tuesday night, I was content with kicking my feet up and taking it easy. It was a long day at school and I was wiped. But, I could tell that Tracker was itching to run.

As usual, I couldn’t say no to her puppy-dog eyes. So, I laced up my shoes and took her on a speedy two-mile jaunt. By the time we made it home, I was feeling really good.

Similar things happen all the time. Tracker just helps motivate me to get out and be active when I really feel like being a bum. I never regret it, either!

Jackie Kennedy

We all know that I love the presidents and I especially love John Kennedy.What you may not know is that my adoration extends to Jackie Kennedy. To me, she is everything lovely and classy.

Those beliefs have only been reinforced with the release of a 1964 audio interview with her. Although she didn’t exactly hold her tongue as a “lady” may be expected to do, she was so real.

I was also entranced by the ABC special “In Her Own Words,” which included the audio tapes and interviews with her daughter, Caroline.
